Reduce artifact sizes

Currently the OpenAPI generator wrapper and the TO to Docx generator blow up the size to about 50mb due to external dependencies. This causes several issues, including not being able to publish both beta and stable at the same time using the pages. Extracting the 3rd party components (OpenAPI generator) or switching to external dependencies (POI from Orbit) would reduce the sizes substantially.
