[UBI] Logging issues not reporting timestamps

Description

Some logging instructions in various components overwrote the default logging configuration which includes timestamps. As a result, these component did not create logs with timestamps.

• context, device, service, pathcomp, kpi*, telemetry, nbi, webui

Sequence of actions that resulted in the bug

• log files of certain components did not contain timestamps
