sanitize: remove private i2CAT artifacts and prepare for public ETSI repo 

- Remove tracked local-only files (.vscode/settings.json, hosts.local.yml)
- Remove private image defaults (gitlab.i2cat, ghcr.io/sergio-gimenez)
- Make artefact-manager and lite2edge images require explicit override
- Sanitize inventory: replace real IPs with RFC5737 examples, remove i2CAT refs
- Remove StrictHostKeyChecking=no from committed SSH defaults
- Remove obsolete gitlab_token alias from secrets.example and all.yml
- Fix stale federation-manager-remote role to use shared role with variant
- Make secrets.yml optional in all scenarios (remove mandatory vars_files)
- Remove stale docs references (TESTING_SUMMARY.md, ROLE_REFACTORING.md)
- Add image override documentation to README and getting-started
